Maxime Dautresme is creative director at Substance www.substance.hk a multidisciplinary design studio combining branding and interior design. The company has left its striking mark on Hong Kong's new breed of designer restaurants, such as Wan Chai's Madam Sixty Ate, which serves modern European fare; Chom Chom, a Vietnamese restaurant in SoHo; and Hollywood Road's Bibo, which serves fine French cuisine in an art-centric interior.
